Lomo Saltado
There’s nothing more Peruvian than lomo saltado. Peru has a lot of national dishes but Lomo Saltado is the most popular meat dish and my favorite one. Our country has hosts diverse cultures, like Chinese culture, so thanks to these cultural clashes in the kitchen, Chifa was born, this dish is part Criollo, part Chifa. Criollo meaning mixed influenced, and Chifa, as I explained, is the cuisine in Peru, which blends Peruvian influences and those of Chinese origin. so, lomo saltado got its special flavor from the woks brought by Chinese immigrants.
Put a mix of sliced steak, red onions, Chinese onions, french fries, ají Amarillo, tomato, and you’ve got the basic recipe. but a real Peruvian lomo saltado has a special sauce that is a mix of Chinese and Peruvian ingredients; Peruvian pisco and soya sauce. this dish must be flame-cooked in the wok so it will have the smoky flavor that gives it character.
This dish is considered the father of many other traditional Peruvian dishes such as tallarín saltado, which is noodle with lomo saltado, tacu tacu which is beans, and rice with loin, among others.
You can find Lomo Saltado everywhere in Peru and abroad, is so popular that you will often find it as a menu of the day option. 💚
My eating habits: what I eat everyday
So, for breakfast, I usually have a chicken sandwich with a glass of ice coffee, for lunch, I eat homemade foods, my mom usually cooks red spaghetti, and chicken with potato stew that I love, for dinner, I eat leftovers from lunch, or I eat some junk food such as burger, chifa, salchipapa, grilled chicken with chaufa, or broaster chicken with fried potatoes.
But on weekends my family sometimes gathers to eat together, we cook regional dishes, such as grilled fish, amazon chaufa, parrillada, tacacho, and ceviche. 💛
